The Oxford English Dictionary (OED) follows the word to La Hispaniola and interprets it as a “system of sticks set upon posts”. Gonzalo Fernández De Oviedo y Valdés, a Spanish pilgrim, was the first to utilize “barbecoa” in print in Spain in 1526 in the Diccionario de la Lengua Española (second Edition) of the Real Academia Española. After Columbus arrived in the Americas in 1492, the Spaniards clearly discovered Tainos broiling meat over a flame broil comprising of a wooden system laying on sticks over a fire. The blazes and smoke climbed and encompassed the meat, giving it a specific flavor.
